Greek quiche

• 3 cloves of garlic, peeled and minced 
• ¼ cup olive oil
• Pinch of salt and pepper
• 2 cups fresh baby spinach
• 2 large whole eggs
• 1 egg yolk
• ½ pound feta cheese, crumbled
• 2 cups heavy cream
• 9-inch pie shell, or 4 six-inch tart shells
• 1 pint grape tomatoes
 

Heat the oven to 350 degrees.

Mix together well the garlic, oil, salt and pepper. Chop the spinach coarsely.

Beat the eggs and egg yolk together. Stir in the garlic paste and half of the feta, then add cream.

Spread the spinach into the pie crusts and pour the egg and cheese mixture over it. Place the tomatoes nicely over it and sprinkle with the other half of feta.

Bake 30 to 40 minutes or until the cheese is brown on top and the center is set.

Serves 4.
